Coconut Cabbage

Cabbage can be very un-inspiring & not the prettiest veg around. This recipe can help turn all those negatives around. By adding a small amount of turmeric, a golden yellow tinge brightens things up, and then add in some fiery chilli, pungent mustard seeds and comforting coconut, your cabbage will suddenly begin to smile.
Let's take a look at cabbage:
1. Fights inflammation
Some of cabbage’s health benefits are due to anthocyanins, which are naturally occurring antioxidants.
2. Keeps you strong
Vitamin C, also known as ascorbic acid, does a lot of work for your body and cabbage contains plenty of it. It helps make collagen and boosts your immune system. It also helps your body absorb iron from plant-based foods.
3. Improves digestion
Packed with phytosterols (plant sterols) and insoluble fibre, cabbage can help keep your digestive system healthy and bowel movements regular. It fuels the good bacteria in your gut that protects your immune system and produces essential nutrients.
4. Protects your heart
The anthocyanins found in cabbage help with more than inflammation. Research suggests they add to the health benefits of cabbage by reducing your risk of heart disease. Scientists have found 36 different kinds of anthocyanins in cabbage, which could make it an excellent option for cardiovascular health.
Recipe (for 4/6)
1 cabbage halved (I used spring cabbage), shredded into long slices, washed and drained
1 onion, cut lengthways into fine slices
1 green chilli, chopped
1/2 tsp cumin seeds
2 tbsp desiccated coconut
1/4 tsp turmeric
sea salt, to taste
1 1/2 tsp vegetable oil
1 tsp black mustard seeds
1 tsp dried red chilli mix
10 fresh curry leaves
Combine the cabbage with the onion, green chilli, cumin seeds, coconut, turmeric and salt. Mic thoroughly and leave for about 10-15 minutes
Heat oil in saucepan and add mustard seeds. when they start to pop, add the dried chilli mix and curry leaves and stir.
Add the cabbage mixture and stir well. lower the heat, cover and cook, stirring occasionally, until the cabbage is barely limp.
Comments
I ate this cabbage dish with some simply fried cod in ghee, seasoned with black-pepper and sea salt. It could also accompany Dahl, or why not add some rice and make a more substantial dish.
