Green Sri Lankan Omelette

Sri Lankan Omelette is a quick nutritious breakfast, packed full of medicinal goodness thanks to the spices, onions, garlic and greens.

You can add whatever vegetables you like. Traditionally, the Sri Lankan omelette has finely chopped carrots and sometimes leeks. In my recipe I have used sweet stem broccoli, finely chopping those juicy stems and including them with the florets. In fact, I always chop broccoli stalks and add them in my dishes!

Let's take a look at broccoli:

Recipe - for 1 person

  • 2/3 eggs

  • 3 finely chopped garlic cloves

  • 1 finely chopped shallot

  • Finely chopped red chilli (optional)

  • Finely chopped sweet stem broccoli and stalks

  • 1/4 teaspoon turmeric

  • 1/4 teaspoon asafoetida

  • 1/2 teaspoon chilli powder

  • 1/2 teaspoon crumbled cinnamon stick

  • Sea-salt

  • Ground black pepper

  • Fresh coriander leaves to add decoration, flavour and more green at the end.

Mix all the ingredients together in a bowl.

Heat some oil in an omelette pan. when hot, add the egg mixture.

Let it catch on the base, draw the outside edges in a few times, to allow the liquid to spread.

Turn down the heat and cover with a tight fitting lid. Allow the ingredients to steam - 3/5 minutes.

Glide on to a serving plate. Sprinkle with the fresh coriander and enjoy your breakfast, slowly.

If you are feeling very Pitta (too much fire), remove the chilli and go easy with the chilli powder, shallot and garlic.
